“Our family gatherings are huge. Everyone brings a dish to one family member’s home, and that person cooks the turkey and stuffing.

“My sister and I have been vegetarians for about 6 years now. When we first stopped eating meat, we were met with a few raised eyebrows, but over the years our Thanksgiving feasts have featured more and more vegetarian dishes as the rest of the family has realized that there are great, healthy choices other than just the ‘traditional’ Thanksgiving fare.

“We now have the countertops lined with such a variety of foods that everyone needs two plates to sample everything! All are amazed at the creative new dishes added each year. We never miss eating meat because our family has supported our choice, and in doing so, they’ve become enriched with healthy and delicious offerings as well.

“Of course, I’m still responsible for the pumpkin pies. It wouldn’t be Thanksgiving, they say, without my pumpkin pie! We do ‘theme’ dinners for our Christmas party, and even if it’s a ‘Mexican Christmas,’ there’s still pumpkin pie. I don’t know what I do different from anyone else, but everyone raves about my pies. Maybe it’s the extra love I put in?”
