Chef Raghavan Iyer
660 Curries

Chef Raghavan has graciously given us permission to share some of his favorite recipes:

Discover 660 Curries

A copy of Chef Raghavan Iyer’s new cookbook, 660 Curries: The Gateway to Indian Cooking, arrived in Saturday’s mail just as I was feeling in a bit of a rut trying to plan meals for the coming week. This big, beautiful book immediately drew me into another world. Exotic combinations and flavors made my mouth water; ingredients I rarely feature on my table suddenly took center stage.

I spent a college semester living in India; I grew to adore Indian food, but I never make it. I know too much to feel comfortable with premixed curry from a jar but too little to start from scratch with all those mysterious spices. 660 Curries makes the incredible variety of these delicious, aromatic dishes accessible and easy to understand — it even starts with recipes for spice blends and pastes that are the base for almost all the subsequent recipes. With this book, I’m both inspired and confident that I can become a competent cook of Indian food.

My first wanderings through the book brought these recipes to the top of my list to try:

  • Ginger Chicken with Peanuts and Coconut
  • Yogurt-Marinated Lamb with Ginger and Garlic
  • Brown Lentils with Chunky Onion and Chiles
  • Cayenne-Spiked Cauliflower with an Onion-Tomato Sauce
  • Sweet Potato and Plantain in a Sauce of Fresh and Roasted Coconut
  • Chili-Spiked Eggplant with Lemongrass and Scallions

And I’m so excited that this brilliant Indian chef, award-winning teacher, and author is coming to Quail Lodge in Carmel Valley to give a cooking class on Sunday, May 18. The cooking demonstration is at 11:45am, followed by a delicious 3-course Indian lunch (featuring fresh organic produce from Earthbound Farm’s Farm Stand next door) at 1pm. All this, plus a goodie bag that includes his cookbook (and the opportunity to have it signed by Chef Raghavan) and organic treats from Earthbound Farm, is only $85 per person — a good deal, I think, because Quail Lodge treats its guests like royalty and their experiences are memorable. (Makes a perfect Mother’s Day gift!) For reservations, call Quail Lodge’s Lifestyle Academy Desk at 831-620-8820, or toll-free 888-828-8787.

If you can’t join us at Quail Lodge, you can pick up his wonderful book at your favorite bookstore or Amazon.com.

Since both our Farm Stand’s Executive Chef, Sarah LaCasse, and I will be attending, you can look for some delicious new Indian entrées at the Farm Stand soon!
