Earthbound Farm Organic Cucumbers are an excellent source of vitamin K, which helps the body produce blood-clotting proteins and is important for bone health. They also contain compounds associated with health and beauty benefits.  

Though it’s a common practice to peel cucumbers before eating, the cucumber’s skin can be beneficial; it contains fiber and other minerals, including silica, which may play a role in promoting healthy skin and complexion. Placing slices of cucumbers over your eyes may also help to reduce puffiness. Two compounds in cucumber, vitamin C and caffeic acid, prevent water retention and may be helpful for swollen eyes and dermatitis.
