Avocado Sandwich

Layers of mashed avocado, tomato, cucumber, red onion, sprouts and Gruyère cheese make a delicious veggie sandwich.

Back in her restaurant days, our consulting chef Pam McKinstry called this sandwich “the Sankaty Special.” Two decades later, it’s still one of Pam’s favorites — ours, too!

4 slice

pumpernickel, rye or whole wheat bread


ripe Earthbound Farm Organic Avocado (peeled, pitted and mashed)


2 slice

Gruyère or Swiss cheese


ripe Earthbound Farm Organic Tomato (small size, thinly sliced)


Earthbound Farm Organic Cucumber (small size, peeled and thinly sliced lengthwise)


Earthbound Farm Organic Red Onion (small size, very thinly sliced)

Earthbound Farm Organic Baby Arugula (or sprouts)


Arrange 4 slices of bread on a cutting board. Divide the avocado between two of the slices. Spread the remaining two pieces of bread with mayonnaise.

Working with the avocado bread slices, top each with a piece of cheese, followed by several slices of tomato and cucumber, then some of the onion. Arrange the arugula or sprouts on top.

Cover with the remaining bread and cut each sandwich in half. Serve immediately.
