Blueberry Yogurt Pops

Here's a healthy treat that kids are sure to love, especially on a hot summer day. A simple fresh blueberry sauce is mixed with vanilla yogurt and then poured into popsicle molds and frozen.

The result? Pure, cool deliciousness!

Don't have a mold? That's okay, small paper cups will work just fine. Note that the prep and total time shown allows about an hour for cooling the berry sauce, then 4 more hours for freezing the popsicles thoroughly.

1 ¾ cups

fresh organic blueberries

3 Tbsp


1 Tbsp

fresh lemon juice

1 ½ cups

nonfat vanilla yogurt


paper cups and wooden popsicle sticks OR a popsicle mold


Combine the blueberries, sugar and lemon juice in a small saucepan over high heat and bring to a boil. Reduce the heat to medium-low and cook, stirring frequently, until the mixture thickens, about 10 minutes. Remove the pan from the heat and cool completely.

Place the yogurt in a bowl and add the cooled blueberry sauce, whisking to blend. Pour the mixture into 6 popsicle molds, insert sticks, and freeze until set, about 4 hours or according to manufacturer's directions.
