Two superfoods — broccoli and chard — meet in this smooth, earthy soup that's sure to chase the chill out of any cold day. Chock full of vitamins and nutrients, and without any added fat, it's healthy, satisfying and sure doesn't skimp on flavor. Use our frozen organic vegetables to save time, and you'll have a hot, hearty soup ready for your family in a snap!
|6 cups||vegetable or chicken broth (divided)|
|1/2 cup||grated yellow onion|
|2 packages||Earthbound Farm Frozen Organic Broccoli Florets|
|1 package||Earthbound Farm Frozen Organic Rainbow Chard|
|Juice of 1/2 lemon|
|Salt and freshly ground black pepper (to taste)|
|1/4 cup||nonfat Greek yogurt (as garnish, optional)|
|Toasted croutons (as garnish, optional)|
Place 4 cups of the broth in a large saucepan, reserving the rest, and bring to a boil over high heat. Add the grated onion, reduce the heat to maintain a simmer and cook, covered, for 5 minutes.
Meanwhile, cook the broccoli in the microwave according to the package directions. Add to the broth and onion mixture, along with any pan juices. Cook the soup, covered, until the broccoli is tender, about 10 minutes. Uncover and let cool for 15 minutes.
Meanwhile, cook the rainbow chard in the microwave according to the package directions. Transfer the chard to a fine mesh sieve, and press on the chard to remove the liquid (or it will discolor the soup).
Place the drained chard and the broccoli mixture into a blender or food processor. Purée, adding the reserved broth as needed to achieve a smooth consistency. If the soup has cooled, return to the saucepan and heat gently.
Divide the soup among warm bowls and garnish each serving with a dollop of yogurt and a sprinkling of croutons, if using. Serve hot.
