Sweet fruit, creamy cheese and crunchy nuts create a delightful contrast with tender butter lettuce leaves in this delicious salad.
|5 ounces||Earthbound Farm Organic Butter Lettuce Leaves (large leaves torn into pieces and small leaves left intact)|
|1 large||Pear (cored and thinly sliced)|
|1/2 cup||crumbled Gorgonzola cheese|
|1/2 cup||Toasted, chopped walnuts|
|2 tablespoons||balsamic vinegar|
|1/2 teaspoon||minced garlic|
|1/2 teaspoon||Dijon mustard|
|6 tablespoons||olive oil|
|1/2 teaspoon||salt (or to taste)|
|1/4 teaspoon||Freshly ground black pepper (or to taste)|
In a large salad bowl, whisk together the vinegar, garlic and mustard. Slowly add the oil in a thin stream, whisking steadily. Season to taste with salt and pepper.
Add the lettuce, pears, Gorgonzola and walnuts, and toss gently to coat. Serve immediately.
