Butter Lettuce Salad with Pears, Gorgonzola, Walnuts and Balsamic Vinaigrette

Sweet fruit, creamy cheese and crunchy nuts create a delightful contrast with tender butter lettuce leaves in this delicious salad.


5 ounces Earthbound Farm Organic Butter Lettuce Leaves (large leaves torn into pieces and small leaves left intact)
1 large Pear (cored and thinly sliced)
1/2 cup crumbled Gorgonzola cheese
1/2 cup Toasted, chopped walnuts
2 tablespoons balsamic vinegar
1/2 teaspoon minced garlic
1/2 teaspoon Dijon mustard
6 tablespoons olive oil
1/2 teaspoon salt (or to taste)
1/4 teaspoon Freshly ground black pepper (or to taste)


In a large salad bowl, whisk together the vinegar, garlic and mustard. Slowly add the oil in a thin stream, whisking steadily. Season to taste with salt and pepper.

Add the lettuce, pears, Gorgonzola and walnuts, and toss gently to coat. Serve immediately.
