I have made this soup a hundred times!! It is really, really good. I've used other greens too besides the chard -- collards, spinach; and used other beans besides the white bean -- pinto for example. I have also blended the entire pot of vegetables to make it a smooth thick soup. So any way I've fixed it it's always tasted fantastic. Thanks for a great recipe! This was not only an outstanding,hearty,delectible and light soup but it visually presented itself as extremely appetizing. I incorporated one large clove of garlic into the receipe. There was much liquid in the cooked beans purchased "dried". I used two cans of low sodium vegetable brothe and the rest I used the water the beans had just cooked in. I found to be careful not to overcook the butternut squash...either in the receipe or in reheating. This was the most outstanding and flavorful soup to become one of our favorites as well as our guests.

Absolutely delicious! And very flexible...don't worry about amounts, just use the recipe as your guide...use the whole onion, the whole squash, one or two bunches of chard, more celery if you want, and fine to use all olive oil and no canola....and, I added a small bonus; I drizzled a bit of basil infused olive oil over each bowl. Best soup ever.

This is an excellent soup. Very flavorful and healthy. Lost my original copy and had been searching for where I had first seen it. Am happy I came upon it again. Ready to make again.
