California Vegetables Roasted with Moroccan Spices

Roasting vegetables in a combination of oil, cumin, garlic, cayenne and brown sugar yields deliciously superior results.

Add convenience to the mix by starting with good-quality frozen veggies like our Frozen Organic California Blend, a delicious mix of carrots, cauliflower and broccoli. Never settle for bland veggies!


Ingredients

4 tablespoons Canola or other vegetable oil
1 1/2 teaspoons cumin
2 tablespoons golden brown sugar (packed)
1 clove Earthbound Farm Organic Garlic (minced)
1/2 teaspoon salt (or to taste)
1 pinch cayenne pepper
1 package Earthbound Farm Frozen Organic California-Style Blend (10 oz)


Directions

Preheat the oven to 350 degrees F.

In a small bowl, stir together the cumin, brown sugar, garlic, salt and cayenne.

Pour the frozen vegetables into a 9-inch square baking pan. Pour the seasoning mixture over them and toss until the vegetables are well coated.

Bake uncovered, stirring once or twice, until the veggies are tender and lightly browned, 25 to 30 minutes.

 

Fresh Variation:  Substitute 1 package (10 oz) frozen Earthbound Farm Organic Broccoli or Cauliflower Florets, or a combination, for the California-Style Blend. Roast at 375 degrees F for 30 to 40 minutes.
