Melon Lassi


Lassi is a chilled yogurt drink popular in India, where it's served with varying degrees of thickness. It can be flavored with puréed fruits, juices and spices. Here we feature fresh melons and the spicy flavor of crystallized ginger.


2 cups ripe melon, such as honeydew or cantaloupe (cubed and chilled)
1 tablespoon finely minced crystallized ginger
2 cups whole milk
3/4 cup plain yogurt
3 tablespoons honey
6 Ice cubes


Place the melon and ginger in a blender and purée. Add the remaining ingredients and process until the mixture is light and frothy. Serve immediately.
