Minty Melon Cooler


If time permits, partially freeze the melon cubes before blending so the drinks will be very cold. The mint is delicious but optional; feel free to leave it out if you wish.


1 cup vanilla yogurt or frozen vanilla yogurt
2 cups honeydew melon (cut into 1-inch chunks, no rind)
2 cups Galia melon, cantaloupe, or other muskmelon (cut into 1-inch chunks, no rind)
1 tablespoon fresh lime juice
6 fresh mint leaves (plus 2 extra sprigs as garnish, optional)
6 Ice cubes


Combine all the ingredients in a blender or food processor and process until smooth. Divide the mixture between 2 tall glasses and garnish each with a mint sprig, if desired.
