If time permits, partially freeze the melon cubes before blending so the drinks will be very cold. The mint is delicious but optional; feel free to leave it out if you wish.
|1 cup||vanilla yogurt or frozen vanilla yogurt|
|2 cups||honeydew melon (cut into 1-inch chunks (no rind))|
|2 cups||Galia melon, cantaloupe, or other muskmelon (cut into 1-inch chunks (no rind))|
|1 tablespoon||fresh lime juice|
|6||fresh mint leaves (plus 2 extra sprigs as garnish, optional)|
Combine all the ingredients in a blender or food processor and process until smooth. Divide the mixture between 2 tall glasses and garnish each with a mint sprig, if desired.
