I love these muffins! I altered a couple of things because I am a nutritionist and so that happens with a lot of recipes...lol! Less sugar I use about 3/4 cup and I use either palm sugar or succunat. Half the flour became spelt flour and the vegetable oil became coconut oil which I halfed and added the other half was coconut milk. I always max out the fruit .... such a great taste especially the next day! Thank you to all to have carried this recipe through out the years~

My family loves this recipe for the yummy taste and I like all the fruits/veggies/nuts that they're eating. I also like this recipe because of it's versatility. I can substitute more applesauce for oil, sugar or pineapple, leave out the coconut, and substitute dried blueberries or cranberries for raisins if that's what's in my cupboard. I never want to lose this version of the Morning Glory Muffin.

Absolutely one of the best

Absolutely one of the best things I've ever tasted! I had to make w/out the nuts since we have a tree nut allergy. If you're feeling really naughty, frost w/ cream cheese frosting. 1 stick soft butter, 8 oz. soft cream cheese, 1 lb. powdered sugar, 1 tsp. vanilla. Whip together.

These look delish, however I could never make them in my house. With 27g of sugar and 19 g of fat per muffin, neither my diabetic husband or I could eat them. I considered altering the recipe, which I do frequently with other recipes, however they may not end up tasting the way the original ones do. Anyone tried that yet?? I read that this recipe was created in 1978 before many of us were looking at such things, but am really surprised that this has not been revised to reflect the obesity/health concerns that so many of us have today.

Best Muffin ever! This is the one and only muffin I ever make! Most muffins do not have any real substance but this one actually could be your breakfast. I often cut down on the oil a bit and add applesauce in it's place. You cannot cut down on the oil too much or you will get a different consistency of muffin. Sometimes I add a bit of whole wheat flour in place of some of the white. I came back to the website to print off the recipe again because the copy I use was worn.
