Peas Cooked with Lettuce and Mint

What’s lettuce doing in peas? It was the French who figured out that if you cook peas with lettuce, you don’t need any other liquid. The lettuce gives up just enough moisture to cook the peas to perfection.

Don’t be surprised if your family says, “More peas, please!”


1/2 head butter lettuce
1 1/2 teaspoons Sugar
2 teaspoons chopped fresh mint
1/4 teaspoon salt
1 tablespoon butter
1 package Earthbound Farm Frozen Organic Peas (separated)
1/4 cup sliced Earthbound Farm Organic Green Onions


Separate the lettuce leaves and slice into thin strips about 1 inch long. Measure 1 cup lightly packed.

In a small bowl, mix the sugar, mint and salt.

Melt the butter in a small (1-1/2 to 2-quart) saucepan over medium heat. Remove the pan from the heat and sprinkle half of the lettuce over the butter. Top the lettuce layer with half of the frozen peas, half of the seasoning mixture and half of the green onions. Top that with a second layer using the rest of the lettuce, peas, seasonings and onions.

Cover tightly and cook over medium heat for 7 to 8 minutes or until almost tender. Uncover, stir and cook until peas are tender, 2 to 4 minutes more.

Fresh Variation: Use 10 oz (2 cups) of fresh peas for the frozen. The cooking time remains the same.
