Petite Lettuces with Avocado Vinaigrette

Luscious wedges of avocado alternate with cherry tomatoes for a gorgeous presentation. Serve this salad on a large, flat platter to show off the pretty colors and shapes of the petite lettuce leaves.

Avocado oil is buttery and rich, and it's good for you, too — here we keep the vinaigrette dressing simple so the oil isn't overwhelmed.


Ingredients

1 1/2 tablespoons white wine or champagne vinegar
4 1/2 tablespoons avocado oil
1/4 teaspoon dried tarragon
1/4 teaspoon salt (or to taste)
  freshly ground pepper (to taste)
5 ounces Earthbound Farm Organic Petites Lettuce Leaves
1 cup halved Earthbound Farm Organic Cherry Tomatoes
2 ripe Earthbound Farm Organic Avocados (peeled, pitted and cut into thin slices)


Directions

To make the vinaigrette, place the vinegar, oil, tarragon, salt and pepper in a small glass jar and seal tightly. Shake vigorously to combine. Taste and adjust seasoning as desired. Set aside at room temperature.

Place the lettuce leaves in a large salad bowl and toss with two-thirds of the dressing. Transfer the greens to a large platter and arrange decoratively. Scatter the tomatoes over the salad, and then arrange the avocado slices. Drizzle more of the dressing over the salad and serve immediately.
