Prosciutto Rolls with Quince and Chevre


Looking for something new and unusual in the hors d'oeuvres department? These tasty little appetizers are wonderfully flavorful and easy to make. Slices of salty ham are wrapped around mild, creamy goat cheese, peppery watercress, and our sweet-tart Caramel Quince Butter.

The rolls are also excellent if you use quince paste, which is sometimes sold in gourmet stores and cheese specialty shops under its Spanish name, membrillo. Either way, these tender morsels will disappear in a flash!


12 slices prosciutto ham (cut in half crosswise)
8 ounces soft, mild chevre (goat cheese, at room temperature)
1 cup Caramel Quince Butter or quince paste (at room temperature)
1 small bunch watercress (stems removed)


Spread a thin layer of goat cheese on each piece of prosciutto (one side only). Spread a thin layer of quince paste on top of the cheese. Cover with a layer of watercress leaves.

Roll up the ham around the filling to create a neat packet. Transfer the rolls to a platter, garnishing with any leftover watercress. The rolls can be refrigerated, covered, for up to 6 hours before serving.
