Romaine Salad Blend with Creamy Avocado Dressing


Inspired by the 50's classic Green Goddess, the dressing is the star of this salad. It's a delicious dipping sauce for shrimp or veggies, too.

If you find yourself with leftover dressing, it will keep in the refrigerator (tightly sealed) for up to 3 days.


2 anchovies (2 teaspoons anchovy paste)
2 Earthbound Farm Organic Green Onions (chopped)
1 clove Earthbound Farm Organic Garlic (peeled)
2 tablespoons fresh tarragon leaves
2 tablespoons fresh chopped chives
2 tablespoons Earthbound Farm Organic Italian Parsley (leaves only)
  Zest of 1 Earthbound Farm Organic Lemon
  Juice of 1/2 Earthbound Farm Organic Lemon
1 tablespoon tarragon or white wine vinegar
1 small ripe Earthbound Farm Organic Avocado
1/4 cup mayonnaise
1/4 cup sour cream or plain yogurt
  Salt and freshly ground pepper (to taste)
10 ounces Earthbound Farm Organic Romaine Salad Blend
1/2 cup halved Earthbound Farm Organic Cherry Tomatoes
1/3 cup thinly sliced radishes
1/2 Earthbound Farm Organic Cucumber (diced)


Combine the first 10 ingredients (anchovies through avocado) in a food processor and pulse to chop. Add the mayonnaise and sour cream, and purée until smooth. Season to taste with salt and pepper.

Place the greens in a large bowl. Add the tomatoes, radishes, cucumbers and dressing. Toss to coat and serve immediately.
