Romaine Salad Blend with Creamy Avocado Dressing

Inspired by the 50's classic Green Goddess, the dressing is the star of this salad. It's a delicious dipping sauce for shrimp or veggies, too.

If you find yourself with leftover dressing, it will keep in the refrigerator (tightly sealed) for up to 3 days.

anchovies (2 teaspoons anchovy paste)


Earthbound Farm Organic Green Onions (chopped)

1 clove

Earthbound Farm Organic Garlic (peeled)

2 Tbsp

fresh tarragon leaves

2 Tbsp

fresh chopped chives

2 Tbsp

Earthbound Farm Organic Italian Parsley (leaves only)

Zest of 1 Earthbound Farm Organic Lemon

Juice of 1/2 Earthbound Farm Organic Lemon

1 Tbsp

tarragon or white wine vinegar


ripe Earthbound Farm Organic Avocado

¼ cup


¼ cup

sour cream or plain yogurt

Salt and freshly ground pepper (to taste)

Earthbound Farm Organic Romaine Salad Blend

½ cup

halved Earthbound Farm Organic Cherry Tomatoes

⅓ cup

thinly sliced radishes


Earthbound Farm Organic Cucumber (diced)


Combine the first 10 ingredients (anchovies through avocado) in a food processor and pulse to chop. Add the mayonnaise and sour cream, and purée until smooth. Season to taste with salt and pepper.

Place the greens in a large bowl. Add the tomatoes, radishes, cucumbers and dressing. Toss to coat and serve immediately.
