Sautéed Power Greens with Corn and Mushrooms

The tender baby leaves of our Power Greens are pre-washed and recipe ready, with no chopping or de-stemming needed. This simple and quick sauté is a perfect side for roast chicken, and it’s delicious as part of a vegetarian meal.

olive oil

1 Tbsp

finely minced garlic

5 ½ cup

fresh mushrooms (1/4-inch-thick slices)

5 ½ Tbsp

vegetable broth

2 ¾ cup

fresh corn kernels, from about 4 to 5 ears (or Earthbound Farm Frozen Organic Sweet Corn)

Earthbound Farm Organic Power Greens

Sea salt (to taste)

Freshly ground black pepper (to taste)


Heat the oil in a large skillet; when hot, add the garlic and sauté 1 minute. Add the mushrooms and sauté over medium-high heat for 5 minutes, stirring constantly, until the mushrooms are tender.

Add vegetable broth and corn; continue cooking and stirring for 2 more minutes.

Reduce heat to low and add the greens. Toss gently with the vegetables until the greens are just wilted (don't overcook). Season to taste with salt and pepper. Serve immediately.

*Note: For a 12oz bag of Power Greens, increase the mushrooms to 6 cups, the vegetable broth to 6 tablespoons, and the corn to 3 cups.
