Shrimp and Cauliflower Stew

This quick weeknight meal is packed with flavor from nutritious vegetables and lean protein. The stew combines pantry staples with fresh ingredients that can be used in other dishes throughout the week to reduce food and packaging waste.

Ingredients

2 tablespoons extra-virgin olive oil (1-1/4)
1 1/2 pounds Frozen peeled and deveined shrimp (thawed)
1 small Earthbound Farm Organic White Onion (or Spanish onion, sliced)
1 medium Earthbound Farm Organic Carrot (peeled and sliced)
2 cups Earthbound Farm Organic Baby Spinach (or Baby Arugula, Mixed Baby Kales or Power Greens, packed)
2 cups Earthbound Farm Organic Cauliflower florets (approximately 1/2 head of cauliflower)
2 teaspoons dried oregano
1/2 teaspoon dried thyme
1 16-ounce jar clam juice (2 cups)
1 15-ounce can organic cannellini beans (also called white kidney beans, drained and rinsed)
1 28-ounce can whole peeled tomatoes (crushed)
  Salt and pepper
 
  For the gremolata topping:
1 teaspoon lemon zest
2 tablespoons Freshly chopped Earthbound Farm Organic Italian Parsley
  salt


Directions

Heat oil in a large pot over medium heat. Add onions, carrots and cauliflower; sauté until onions are softened, about 5 minutes.

Add oregano and thyme, then season veggies with salt and pepper; stir for 2 minutes more.

Stir in clam juice, crushed whole peeled tomatoes with juices, and cannellini beans; cover and simmer for 15 minutes until cauliflower is fork tender.

Meanwhile, make the citrus herb gremolata by stirring together parsley, lemon zest and salt to taste in a small bowl until combined. Set aside.

Uncover the stew, stir in the baby spinach and shrimp. Cover and simmer for 2-3 minutes more until shrimp are pink and spinach has wilted.

Serve family style or in heated bowls, if desired. Garnish with citrus herb gremolata. Leftover stew can be stored in an airtight container in the refrigerator to enjoy for up to 2 days.
