Spring Mix with French Vinaigrette


This simple yet classic dressing suits our Earthbound Farm Organic Spring Mix perfectly. Optional garnishes include toasted nuts, crumbled or grated cheese and garlic croutons.


2 tablespoons tarragon or white wine vinegar
1 1/2 teaspoons Dijon mustard
1 teaspoon dried tarragon
2/3 cup extra-virgin olive oil
1/8 teaspoon salt
  freshly ground pepper (to taste)
1/2 teaspoon Sugar
4 ounces Earthbound Farm Organic Spring Mix


Combine all ingredients except the greens in a glass jar and shake vigorously to emulsify.

Place the lettuce in a bowl and toss with a few tablespoons of vinaigrette. Serve immediately.

Extra dressing may be refrigerated up to one month. The vinaigrette is best served at room temperature.
