Stir-Fry Broccoli with Basil and Parmesan

Stir-frying broccoli has several advantages: you don’t need water, which dilutes the flavor; you have more control over the texture than boiling or microwaving; and you can cook it al dente, just crisp enough that only you will know it was frozen!

Here we season the broccoli with fresh basil and Parmesan cheese for a delicious side dish that complements almost any entrée.


Ingredients

2 teaspoons olive oil
1 package Earthbound Farm Frozen Organic Broccoli Florets
2 cloves garlic (minced)
1/2 cup vegetable or chicken broth
3/4 teaspoon cornstarch
1 tablespoon chopped fresh basil
2 tablespoons grated Parmesan cheese


Directions

In a large skillet, preferably nonstick, heat the oil over high heat. Add the broccoli and stir-fry for 2 minutes. Add the garlic and stir-fry for 2 to 3 minutes more, or until the broccoli is lightly browned and almost tender. 

In a small bowl, stir the cornstarch into the broth until dissolved. Add the liquid to the broccoli. Stir-fry for 1 minute or until tender.

Stir in the basil and stir-fry for 1 minute just to warm it. Remove the pan from the heat and stir in the Parmesan cheese. Serve immediately.

Fresh Variation:  Substitute 10 ounces of small fresh broccoli florets for the frozen. Stir fry for 1 minute initially before adding the garlic. Once you add the liquid, cover and cook the broccoli over medium heat for 3 to 5 minutes, or until tender. Then add the basil and continue with the same instructions as above.
