Whole Wheat Pizza Crust

This easy crust adds flavor and nutrients to any homemade pizza: its flavor is a perfect match for your favorite toppings, and the dough bakes beautifully rolled thick or thin. Try it with Pizzetta with Roasted Broccoli, Bacon and Pecorino, or with our Power Greens Pizza!

Recipe makes enough dough for one 12-inch medium-thick crust for a pizza that serves 4, or for about 4 thin-crust individual-size pizzas.

Ingredients

½ cup

whole wheat flour

1 cup

all-purpose flour

1 package

Quick-rising yeast

1 Tbsp

honey

1 tsp

Kosher salt

⅔ cup

warm water

Directions

In a large mixing bowl combine whole wheat flour, all-purpose flour, yeast, honey and salt.

Mix in water. If necessary, add additional water 1 tablespoon at a time until pizza dough comes together.

Transfer dough onto a slightly floured surface and knead 10-12 times until it forms a smooth ball.

Place pizza dough into a lightly oiled bowl and cover. Place in a warm space for 1 hour to rise. (The microwave works well as a resting place for the dough.)

The dough will double in size while resting. Punch the dough down and transfer it to a lightly floured surface. (At this stage, the dough can be frozen for up to 2 months and thawed when ready to roll out.)

Roll out the pizza dough on parchment paper for easy baking and cleanup. Preheat your oven and bake according to your recipe's directions.

Because pizza is so easy to customize to your taste or what's in your fridge, you don't really need a recipe. If you're going your own way with your pie, here are a few baking tips:

  • The hotter the oven, the better the pizza. If you have a pizza stone, put it on the lowest rack in your oven and preheat to 450-500 degrees F. If you don't have a pizza stone, you'll get better results if you preheat a 12-inch cast iron skillet, cookie sheet, baking sheet or pizza pan along with the oven.
  • Once the oven is hot and the crust is ready, place your pizza in the oven on the preheated stone or pan. Check the crust after about 5 minutes and rotate your pizza if the crust is browning unevenly. 
  • The pizza is done when the toppings are hot, the crust is golden brown and the cheese is melted and browned.
